Liam Randall is a chef, horticulturalist and keen observer of culture the world over. A love of food and a desire to learn from the best led him to train under some of Australia’s most well-respected chefs at renowned Melbourne restaurants Vue de Monde and Donovans, and to immerse himself in the food cultures and cuisines he encountered in countries like France.

He returned home with a deep yearning to discover and celebrate the same for Australia – and Australian Cuisine Begin was born. Liam believes a cuisine forms the DNA of a nation, and that a clearly articulated and celebrated national cuisine is long overdue in Australia and can foster opportunities for a more unified country. He dreams of creating the National Australian Cuisine Centre, where we display, preserve, research and continue to evolve our national cuisine.

Australian Cuisine Begin has been underway since 2015, when Liam began travelling the country in his swag, exploring the oral and written history of our nation’s cuisine. From Indigenous food customs through to colonial cooking and more modern techniques, Liam has uncovered vibrant stories of real people and the ingredients and recipes they have created, shared and eaten together.
